Green tea is well known for being healthy, but many people find it hard to make a habit out of drinking green tea because they don’t like the taste. Time and time again, one of the biggest complaints we hear about Japanese green tea is that it’s too bitter and astringent. Such complaints are very sad, because they’re often the result of one of a few common factors; poor quality tea, old tea or tea that wasn’t stored properly, too much tea, or, most commonly of all, too hot of water and oversteeping.
We stand behind the quality and storage conditions of all our teas, but we can’t brew it for you each time you want a cup. That’s why we’ve created this handy brewing guide to help you figure out how to brew the best possible tasting cup of Chinese green tea every time.
Green tea
(for about 6 to 8 glasses or cups)
1) Put a shaved tablespoon of green tea directly in the teapot (green tea bendsin contact with water, it is not necessary to use a tea ball).
2) Pour the equivalent of a glass of simmering water(20 cl) into the teapot.
3) Let stand for about a minute, then circulate the water in the teapot describing slight lateral movements for about ten seconds.
4) Throw the water in the teapot (but not the tea!) This so-called "washing" phase of the tea aimed at removing part of its natural bitterness.
5) Fill the teapot with three-quarters of simmering water.
6) Let it infuse for 3 to 5 minutes depending on your taste (light or more full-bodied). Pour the tea by gradually raising the teapot above the glass and then lowering it. This traditional back and forth will froth the tea, releasing all its aromas.
Now, taste...
Tip: Once the teapot is empty, you can add simmering water, wait 3-5 minutes and serve another teapot with the same teapot, indeed the best green teas continue to deliver their aromas to the second teapot.
