There are many kinds of tea in China, which are affected by factors such as variety, origin, tea-making process, storage conditions, etc., showing a variety of sensory characteristics, which is also an important reason why tea has always been favored by consumers.
With the improvement of people's living standards, tea has gradually changed from "chai, rice, oil, salt, sauce and vinegar tea" to "book, sword, chess, poetry, wine and wine tea", and consumers have put forward more requirements for the richness of tea quality characteristics.
In order to better describe the sensory quality of tea and change the past situation of "only comprehensible, but not in words", the Tea Research Institute of the Chinese Academy of Agricultural Sciences, the Tea Quality Supervision, Inspection and Testing Center of the Ministry of Agriculture and Rural Affairs, and the China Tea Society have conducted research on Chinese tea color, On the basis of the taste and aroma wheel, the Chinese tea flavor wheel (2019 version) is drawn, including a total of 32 color attributes, 13 taste attributes, 75 aroma attributes, and a total of 120 attributes.
